Patate In Insalata Potato Salad

Ingredients
- Servings: 4
- 2 lbs potatoes
- 6 tablespoons extra virgin olive oil
- 3 tablespoons fresh finely chopped italian parsley
- 1 garlic clove, minced
- 1/2 teaspoon red wine vinegar
- 2 teaspoons oregano (dry)
- 1 teaspoon pepper
- 1 teaspoon salt (to taste)
Recipe
- 1 in a large pot boil the potatoes whole in salted water until done.
- 2 in the meantime prepare the rest of the ingredients in a bowl. start by putting the oil salt, pepper and vinegar and beat them together with a fork.
- 3 then add the oregano, garlic and parsley and continue beating with a fork until well combined.
- 4 when the potatoes are ready drain them and peel them. be careful that you don't burn your fingers. if you are not in a hurry let them cool a bit first.
- 5 once the potatoes are peeled cut them into cubes and place them in a bowl.
- 6 add the rest of the ingredients and mix well.
- 7 serve immediately or put it in the refrigerator and serve later.
