Rice (chicken Can Be Added) Salad In Tomato Cups

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 2 tablespoons sunflower oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon curry powder
  • 1 1/2 cups cooked brown rice
  • 1 1/2 cups cubed cooked chicken (optional)
  • 1 cup celery
  • 1 tablespoon chopped green pepper
  • 3/4 cup mayonnaise
  • 6 ripe tomatoes
  • lettuce (optional)

Recipe

  • 1 combine oil, vinegar, onion, sea salt, and curry powder.
  • 2 toss with rice, mixing well.
  • 3 chill at least 1 hour.
  • 4 meanwhile, peel tomatoes, remove stem ends. starting at the top, cut tomatoes into fourths, cutting about 2/3 of the way down.
  • 5 chill until ready to serve.
  • 6 just before serving, add rest of ingredients to rice mixture. blend well.
  • 7 serve in tomato cups on lettuce.
