Rice (chicken Can Be Added) Salad In Tomato Cups

Ingredients
- Servings: 6
- 2 tablespoons sunflower oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon sea salt
- 1 teaspoon curry powder
- 1 1/2 cups cooked brown rice
- 1 1/2 cups cubed cooked chicken (optional)
- 1 cup celery
- 1 tablespoon chopped green pepper
- 3/4 cup mayonnaise
- 6 ripe tomatoes
- lettuce (optional)
Recipe
- 1 combine oil, vinegar, onion, sea salt, and curry powder.
- 2 toss with rice, mixing well.
- 3 chill at least 1 hour.
- 4 meanwhile, peel tomatoes, remove stem ends. starting at the top, cut tomatoes into fourths, cutting about 2/3 of the way down.
- 5 chill until ready to serve.
- 6 just before serving, add rest of ingredients to rice mixture. blend well.
- 7 serve in tomato cups on lettuce.
