oven roasted baked potatoes

- 8 fingerling potatoes, cubed
- 1 large onion, cubed
- 2 tablespoons coconut oil, melted
- 2 tablespoons minced garlic
- 1 tablespoon sea salt

- preheat oven to 350 degrees f (175 degrees c). line a large baking sheet with foil.
- toss fingerling potatoes, onion, coconut oil, garlic, and sea salt in a large bowl. spread mixture baking sheet; bake, stirring every 10 minutes, until potatoes are tender, about 30 to 40 minutes.
