oven roasted baked potatoes

Ingredients

  • Servings: 6
  • 8 fingerling potatoes, cubed
  • 1 large onion, cubed
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons minced garlic
  • 1 tablespoon sea salt

Recipe

    Preparation Time: 10 mins Cook Time: 30 mins Ready Time: 40 mins

  • preheat oven to 350 degrees f (175 degrees c). line a large baking sheet with foil.
  • toss fingerling potatoes, onion, coconut oil, garlic, and sea salt in a large bowl. spread mixture baking sheet; bake, stirring every 10 minutes, until potatoes are tender, about 30 to 40 minutes.
