Roast Fingerling Potatoes

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 2 cups fingerling potatoes or 2 cups diced potatoes
  • 1 -2 tablespoon olive oil
  • 1 -2 tablespoon fresh rosemary, chopped
  • salt
  • pepper

Recipe

  • 1 preheat oven to 425 degrees.
  • 2 place potatoes in a bowl and drizzle with olive oil. sprinkle with salt and pepper and rosemary leaves.
  • 3 toss well to coat.
  • 4 place on a baking sheet in the oven for 30 minutes.
