Skewered Lamb

Total Time: 1 hr 14 mins Preparation Time: 1 hr 9 mins Cook Time: 5 mins

Ingredients

  • 1/2 cup unsweetened pineapple juice
  • 3 tablespoons worcestershire sauce
  • 1 teaspoon ground coriander
  • 1 teaspoon minced garlic
  • 1/4 teaspoon crushed red pepper flakes
  • 1/8 teaspoon black pepper
  • 1 lb boneless lamb loin, cut into 1/8 inch thick slices

Recipe

  • 1 marinade: in small bowl, combine pineapple juice, worcestershire, coriander, garlic, red pepper and black pepper.
  • 2 place lamb in deep glass bowl; pour marinade over lamb.
  • 3 cover; marinate in refrigerator about 1 hour.
  • 4 meanwhile, soak think bamboo skewers in water.
  • 5 weave skewers through lamb strips so meat lies flat, discard marinade.
  • 6 place lamb on grill.
  • 7 grill over medium coals 2 minutes.
  • 8 turn; grill an additional 2 minutes or until lamb is juicy and barely pink in center.
