Spicy Banana Fritters (zitumbuwa)

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 15
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 tablespoon powdered sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup evaporated milk
  • 1 egg, separated (egg beaten stiff)
  • oil
  • 3 bananas, mashed and sprinkled with
  • lemon juice
  • 1/2 cup roughly chopped pine nuts
  • cinnamon
  • sugar

Recipe

  • 1 measure, sift and mix all dry ingredients.
  • 2 combine milk and egg yolk, add to dry ingredients.
  • 3 fold in the mashed bananas, egg and pine nuts.
  • 4 batter should have consistency to be dropped by teaspoonful in hot oil.
  • 5 pour enough oil into skillet to a depth of 1 inch.
  • 6 test heat of oil[approximately 375°].
  • 7 drop by spoonfuls as many as pan will hold.
  • 8 turning as it browns,cook about 5 minutes.
  • 9 drain on paper towels.
  • 10 sprinkle with cinnamon and sugar, keep warm and just before serving top with ice cream.
