Lamb With Sweet Onion Marmellata

Ingredients

- 2 tablespoons olive oil
- 4 large onions, thinly sliced
- 1/4 cup orange marmalade
- 1 tablespoon rosemary
- 1 tablespoon thyme
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground black pepper
- 2 tablespoons balsamic vinegar
- 1 tablespoon sugar
- 1 tablespoon rosemary

- 1 3/4 lbs boneless lamb loin chops
- 1/4 cup parsley
Recipe
- 1 for the onion marmellata, place a large, heavy pot over medium-high heat.
- 2 add the olive oil and the onions.

- 12 about 20 minutes before the onions are finished, remove the lamb chops from the refrigerator.
- 13 place a grill pan over medium-high heat or preheat a gas or charcoal grill.
- 14 grill the lamb chops to medium, about 7 minutes a side depending on thickness.
