Sour Cream Cranberry Bars

Ingredients
- 1 cup butter, softened
- 1 cup brown sugar, packed
- 1 cup quick-cooking oats
- 1 1/2 cups all-purpose flour, plus
- 2 tablespoons all-purpose flour, divided
- 2 cups dried cranberries
- 1 cup sour cream
- 3/4 cup sugar
- 1 egg, lightly beaten
- 1 tablespoon grated lemon zest
- 1 teaspoon vanilla extract
Recipe
- 1 in a large mixing bowl, cream the butter and brown sugar.
- 2 combine the oats and 1 1/2 cups flour.
- 3 add to the creamed mixture until blended.
- 4 set aside 1 1/2 cups for topping.
- 5 press remaining crumb mixture into an ungreased 9x13 pan.
- 6 bake at 350 degrees for 10-12 minutes or until lightly browned.
- 7 meanwhile, in a large bowl, combine the cranberries, sour cream, sugar, egg, lemon peel, vanilla and remaining flour.
- 8 spread evenly over crust.
- 9 sprinkle with reserved crumb mixture.
- 10 bake for 20-25 minutes or until lightly browned.
- 11 cool on a wire rack and refrigerate leftovers.
