Sour Cream Cranberry Bars

Total Time: 57 mins Preparation Time: 20 mins Cook Time: 37 mins

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • 1 cup quick-cooking oats
  • 1 1/2 cups all-purpose flour, plus
  • 2 tablespoons all-purpose flour, divided
  • 2 cups dried cranberries
  • 1 cup sour cream
  • 3/4 cup sugar
  • 1 egg, lightly beaten
  • 1 tablespoon grated lemon zest
  • 1 teaspoon vanilla extract

Recipe

  • 1 in a large mixing bowl, cream the butter and brown sugar.
  • 2 combine the oats and 1 1/2 cups flour.
  • 3 add to the creamed mixture until blended.
  • 4 set aside 1 1/2 cups for topping.
  • 5 press remaining crumb mixture into an ungreased 9x13 pan.
  • 6 bake at 350 degrees for 10-12 minutes or until lightly browned.
  • 7 meanwhile, in a large bowl, combine the cranberries, sour cream, sugar, egg, lemon peel, vanilla and remaining flour.
  • 8 spread evenly over crust.
  • 9 sprinkle with reserved crumb mixture.
  • 10 bake for 20-25 minutes or until lightly browned.
  • 11 cool on a wire rack and refrigerate leftovers.
