Diet Deviled Eggs

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • Servings: 2
  • 2 hard-boiled eggs
  • 1 teaspoon low-fat mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon low fat cottage cheese
  • 1/4 teaspoon cracked black pepper
  • 1/4 teaspoon paprika, for dusting

Recipe

  • 1 peel hard-boiled eggs, halve and remove yolks to a bowl.
  • 2 add remaining ingredients except for paprika.
  • 3 blend thoroughly. i use an immersion stick blender. you could use that or hand-held electric mixer. but you want something to make it creamy and take away texture of cottage cheese.
  • 4 fill egg halves and dust with paprika. enjoy!
