Spinach And Mushroom Stuffing Balls

Ingredients
- Servings: 30
 
- 1 (6 ounce) package stove top stuffing mix, monterey style with mushroon & onion 
 
- 1 2/3 cups hot chicken broth 
 
- 1/4 cup butter 
 
- 2 (10 ounce) packages frozen chopped spinach, thawed and drain 
 
- 2 cups grated parmesan cheese 
 
- 1 cup chopped fresh mushrooms 
 
- 1 small onion, finely diced 
 
- 3 -4 eggs 
 
Recipe
- 1 heat oven to 400°f. 
 
- 2 mix stuffing, water and butter in a large bowl. add all additional ingredients and mixed until well blended. 
 
- 3 shape into 60 balls, about 1 inch across. 
 
- 4 place in a single layer on a greased baking sheet. chill 2 hours.
