Spinach And Mushroom Stuffing Balls

Total Time: 2 hrs 20 mins Preparation Time: 2 hrs Cook Time: 20 mins

Ingredients

  • Servings: 30
  • 1 (6 ounce) package stove top stuffing mix, monterey style with mushroon & onion
  • 1 2/3 cups hot chicken broth
  • 1/4 cup butter
  • 2 (10 ounce) packages frozen chopped spinach, thawed and drain
  • 2 cups grated parmesan cheese
  • 1 cup chopped fresh mushrooms
  • 1 small onion, finely diced
  • 3 -4 eggs

Recipe

  • 1 heat oven to 400°f.
  • 2 mix stuffing, water and butter in a large bowl. add all additional ingredients and mixed until well blended.
  • 3 shape into 60 balls, about 1 inch across.
  • 4 place in a single layer on a greased baking sheet. chill 2 hours.
  • 5 bake 15 to 20 minutes or until lightly browned.
