Spanakopita (spinach Pie) Muffins

Ingredients
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 1/2 teaspoons dried dill
- 1 1/4 teaspoons salt
- 3 eggs
- 1 cup milk
- 2/3 cup vegetable oil
- 1/2 cup prepared basil pesto
- 1 (10 ounce) package frozen chopped spinach, thawed and dried
- 4 ounces feta cheese, crumbled
Recipe
- 1 preheat oven to 400 degrees f.
- 2 grease 12 cup muffin pan.
- 3 in a large bowl, whisk together flour, baking powder, dill, and salt.
- 4 in a medium bowl, whisk together eggs, milk, oil, and pesto until well blended. stir in spinach until blended.
- 5 add the egg mixture to the flour mixture and stir until just blended. gently fold in cheese.
- 6 divide batter equally among prepared muffin cups.
- 7 bake in preheated oven for 21 to 25 minutes or until tops are golden. let cool in pan for 5 minutes, then transfer to wire rack to cool.
