Spanakopita (spinach Pie) Muffins

Total Time: 36 mins Preparation Time: 15 mins Cook Time: 21 mins

Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons dried dill
  • 1 1/4 teaspoons salt
  • 3 eggs
  • 1 cup milk
  • 2/3 cup vegetable oil
  • 1/2 cup prepared basil pesto
  • 1 (10 ounce) package frozen chopped spinach, thawed and dried
  • 4 ounces feta cheese, crumbled

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 grease 12 cup muffin pan.
  • 3 in a large bowl, whisk together flour, baking powder, dill, and salt.
  • 4 in a medium bowl, whisk together eggs, milk, oil, and pesto until well blended. stir in spinach until blended.
  • 5 add the egg mixture to the flour mixture and stir until just blended. gently fold in cheese.
  • 6 divide batter equally among prepared muffin cups.
  • 7 bake in preheated oven for 21 to 25 minutes or until tops are golden. let cool in pan for 5 minutes, then transfer to wire rack to cool.
