Oaty Coconutty Peanut Butter Balls

Ingredients
- 1 cup crunchy peanut butter
- 1/2 cup rolled oats
- 1/4 cup whole wheat flour
- 1/2 tablespoon molasses
- 2 tablespoons sweetened flaked coconut
- 1 cup sweetened flaked coconut (for coating)
- 2 tablespoons extra virgin coconut oil
- 2 tablespoons honey
- 1 tablespoon unsweetened cocoa
- 1 tablespoon sugar (i substitute xylitol)
Recipe
- 1 combine everything except the extra cup of shredded coconut in a medium bowl. i like to use a knife instead of a spoon to combine.
- 2 using fingers, roll into 1-2" balls and roll/press to coat in the coconut. place in small muffin papers and refrigerate for at least an hour to firm up.
