Oaty Coconutty Peanut Butter Balls

Total Time: 1 hr Cook Time: 1 hr

Ingredients

  • 1 cup crunchy peanut butter
  • 1/2 cup rolled oats
  • 1/4 cup whole wheat flour
  • 1/2 tablespoon molasses
  • 2 tablespoons sweetened flaked coconut
  • 1 cup sweetened flaked coconut (for coating)
  • 2 tablespoons extra virgin coconut oil
  • 2 tablespoons honey
  • 1 tablespoon unsweetened cocoa
  • 1 tablespoon sugar (i substitute xylitol)

Recipe

  • 1 combine everything except the extra cup of shredded coconut in a medium bowl. i like to use a knife instead of a spoon to combine.
  • 2 using fingers, roll into 1-2" balls and roll/press to coat in the coconut. place in small muffin papers and refrigerate for at least an hour to firm up.
