Oaty Rhubarb Crumble (cobbler)

Ingredients

  • Servings: 4
  • 1 lb rhubarb, trimed and cut into 3/4 inch pieces
  • 3 1/2 tablespoons orange juice
  • 1/3 cup sugar
  • 3/4 cup plain flour

  • 1/3 cup porridge oats
  • 1/4 cup butter, cut into cubes

Recipe

  • 1 preheat the oven to 190 c/ 375 f/ gas 5.
  • 2 place the rhubarb into an 8x8 oven dish, sprinkle with orange juice and 1/3 cup sugar and place in the oven for 20 minutes.
  • 3 while it's in the oven, mix the flour and the oates in a large bowl.
  • 4 rub the butter into the flour and oates with your fingers until you have a crumbly mixture.
  • 5 add the 1/4 cup sugar to the crumble mix.
  • 6 remove the rhubarb from the oven and spoon the crumble on top.
  • 7 return to the oven and bake for 25 minutes until the top is golden.
  • 8 serve hot with custard or vanilla ice cream.
