Ribs With Really Good Barbecue Sauce

Ingredients
- Servings: 4
- 4 lbs baby back ribs, membrane removed, cut into serving pieces (2-3 ribs each, see note)
- 1 cup flat beer
- 1 cup ketchup
- 1 tablespoon worcestershire sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1/2 lemon, juice of
- 1 garlic clove, minced
- fresh ground pepper
Recipe
- 1 preheat grill. arrange ribs in a single layer on a lightly sprayed or oiled 12x16-inch aluminum foil pan, bone side down. pour 1 cup sauce over ribs. place pan holding ribs on grill over medium heat and cook, with cover closed, for 1 hour and 45 minutes, basting occasionally with sauce. if pan starts to dry out, add more sauce. remove ribs from the pan and place directly on grill, bone side down. grill until meat is very tender, 15-20 minutes longer, basting several times with remaining sauce.

- 3 in a medium saucepan over medium heat, whisk together all ingredients and simmer, uncovered, until flavors are blended, 6-7 minutes.
- 4 note: removing the membrane is an important step. it allows the sauce to penetrate the meat and the fat to drip away during grilling. on the underside (bone side) of the ribs, loosen the membrane with the point of a knife and make a slit large enough so that you can insert your finger under the membrane and pull it up and away from the ribs. using a towel helps grip the membrane. carefully peel back the membrane at an angle. you may need to start over once or twice before you are successful, but it is worth the effort. (some butchers will remove the membrane for you).
