Scott's Finger Lickin Good Lasagna

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 2 cups chopped onions
  • 1 cup chopped celery
  • 1 1/2 cups green peppers
  • 2 lbs ground turkey
  • 1 (15 ounce) can tomato paste
  • 1 (14 1/2 ounce) can chopped tomatoes
  • 4 teaspoons oregano
  • 2 teaspoons basil
  • 1/2 teaspoon salt
  • 6 whole wheat lasagna noodles
  • 2 cups 1% cottage cheese
  • 2 cups reduced-fat mozzarella cheese

Recipe

  • 1 heat the oil in a large skillet and saute the garlic, onion, celery, bell pepper, and turkey.
  • 2 once the turkey is browned, drain off any fat/liquids.
  • 3 add the tomato paste, tomatoes, and seasonings and allow to simmer.
  • 4 heat the oven to 350 degrees f.
  • 5 in a rectangular baking dish sprayed with nonstick cooking spray, make a layer of noodles, cottage cheese, sauce, and mozzarella cheese
  • 6 repeat to make two layers (one cup of mozzarella cheese over each layer).
  • 7 bake for 45 minutes.
