Potato Gnocchi

Total Time: 1 hr 35 mins Preparation Time: 1 hr 30 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 lb hot potato, peeled, cubed, cooked and drained (save cooking water)
  • 2 cups flour
  • salt
  • tomato sauce, for serving
  • parmigiano-reggiano cheese, for serving

Recipe

  • 1 mash hot potato on flat work board or table.
  • 2 add flour on top and mix well to make a soft and elastic dough.
  • 3 on floured surface, knead dough well until it's pliable, 5 - 10 minutes.
  • 4 try not to use too much additional flour.
  • 5 add some reserved hot water if needed.
  • 6 make one large ball.
  • 7 break off small pieces at a time and roll into long strips.
  • 8 cut into 1 inch pieces.
  • 9 press middle of each piece with 2 fingers and roll toward yourself to curl gnocchi.
  • 10 cook in boiling water for a couple of minutes, until tender.
  • 11 drain and serve topped with tomato sauce and grated cheese.
