Spiced Orange Cranberry Mini Muffins - Whole Grain

Ingredients
- 1 cup whole grain wheat flour
- 1 cup oats
- 1/3 cup honey
- 1/3 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup craisins
- 2 eggs
- 1/4 cup butter
- 3/4 cup orange juice
- 1 teaspoon vanilla
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon allspice
- 1 clementine, zest of
- 2 finely diced clementines
- 1 cup powdered sugar
- 2 -3 tablespoons milk
- 1/4 teaspoon orange extract
- 1/4 teaspoon vanilla
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
Recipe
- 1 preheat oven to 350 degrees. line mini muffin pan with liners. silicone are best.
- 2 mix flour, oats, salt, baking soda, baking powder, add craisins, zest of clementine and diced clementine. in a separate bowl, melt butter and blend with honey, brown sugar, eggs, orange juice and vanilla. combine all dry ingredients with all wet ingredients and mix. fill muffin liners until 3/4 full and bake at 350 degrees for 12-15 minutes or until golden brown, firm to the touch and a toothpick comes out clean. remove and let cool.
- 3 while cooling, whisk together spiced orange glaze ingredients. if using silicone muffin liners, remove from liners. dip the tops of the muffins in the glaze. top with a craisin and a bit of orange zest if desired. let glaze set until firm 5 -15 minutes.
