Herbed Cheese Wafers

Ingredients
- 3/4 cup butter or 3/4 cup margarine, softened
- 1/2 cup cheddar cheese, shredded or grated
- 1/3 cup blue cheese, crumbled
- 1 tablespoon fresh tarragon, minced or 1 teaspoon dried tarragon
- 1/2 teaspoon dried oregano
- 1 clove garlic, minced
- 2 cups flour or 2 cups whole wheat flour (or half of each)
Recipe
- 1 beat butter, cheeses, tarragon, oregano and garlic until well mixed.
- 2 beat in flour (dough will be crumbly).
- 3 shape into 2 or 3 rolls, whatever is manageable to handle, and wrap tightly with plastic wrap.
- 4 refrigerate for 4 hours or overnight.
- 5 (i've taken them out after as little as 1& 1/2 hours& they turned out fine.).
- 6 cut into thin (1/8") slices; place on ungreased cookie sheet (parchment paper optional).
- 7 bake at 375f for 10-12 minutes or until golden brown.
