Kurdish Kahdeh

Total Time: 1 hr 20 mins Preparation Time: 1 hr Cook Time: 20 mins

Ingredients

  • 5 cups flour
  • butter or margarine, as needed
  • shredded feta cheese or mozzarella cheese or a mix of any hard cheese
  • 1 teaspoon salt
  • water, as needed

Recipe

  • 1 in a large bowl mix the flour and the salt
  • 2 add water and mix until smooth and non sticky dough is achieved
  • 3 cover and let rest for half hour
  • 4 make dough balls about the size of golf ball
  • 5 using a dough roller, flatten the balls to get about 4 inches in size wafers
  • 6 spread some butter on top of the wafer
  • 7 put about 1 tsp of shredded cheese in the center of the wafer
  • 8 fold one side of the wafer over to create half circle
  • 9 using your fingers pinch the edges so the two layer stick well
  • 10 lay the pockets on a tray
  • 11 spread small pieces of butter on top and around the pockets
  • 12 pre heat oven to 400 deg f
  • 13 bake the tray in the oven until top goldens and then turn the pocket over and bake until golden.
