Kurdish Kahdeh

Ingredients
- 5 cups flour
- butter or margarine, as needed
- shredded feta cheese or mozzarella cheese or a mix of any hard cheese
- 1 teaspoon salt
- water, as needed
Recipe
- 1 in a large bowl mix the flour and the salt
- 2 add water and mix until smooth and non sticky dough is achieved
- 3 cover and let rest for half hour
- 4 make dough balls about the size of golf ball
- 5 using a dough roller, flatten the balls to get about 4 inches in size wafers
- 6 spread some butter on top of the wafer
- 7 put about 1 tsp of shredded cheese in the center of the wafer
- 8 fold one side of the wafer over to create half circle
- 9 using your fingers pinch the edges so the two layer stick well
- 10 lay the pockets on a tray
- 11 spread small pieces of butter on top and around the pockets
- 12 pre heat oven to 400 deg f
- 13 bake the tray in the oven until top goldens and then turn the pocket over and bake until golden.
