Lemony Garlic Fingerling Potatoes

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs fingerling potatoes, halved
  • 1/4 cup butter, melted
  • 1/8 cup olive oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon salt
  • 1 lemon, juice of
  • 1 tablespoon parmesan cheese, grated

Recipe

  • 1 preheat oven to 425°f.
  • 2 place potatoes in an 8" x 8" baking dish.
  • 3 in a small bowl, combine melted butter, olive oil, garlic, salt and lemon juice.
  • 4 pour over potatoes and stir to coat.
  • 5 sprinkle parmesean cheese over potatoes.
  • 6 bake, covered in a preheated oven for 30 minutes.
  • 7 uncover and bake an additional 10 minutes, or until golden brown.
