Lemony Garlic Fingerling Potatoes

- 1 1/2 lbs fingerling potatoes, halved
- 1/4 cup butter, melted
- 1/8 cup olive oil
- 2 teaspoons garlic, minced
- 1 teaspoon salt
- 1 lemon, juice of
- 1 tablespoon parmesan cheese, grated
Recipe
- 1 preheat oven to 425°f.
- 2 place potatoes in an 8" x 8" baking dish.
- 3 in a small bowl, combine melted butter, olive oil, garlic, salt and lemon juice.
- 4 pour over potatoes and stir to coat.
- 5 sprinkle parmesean cheese over potatoes.
- 6 bake, covered in a preheated oven for 30 minutes.
- 7 uncover and bake an additional 10 minutes, or until golden brown.
