Mr. Food American éclairs

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • Servings: 12
  • 1/2 cup frozen whipped topping, thawed
  • 2 tablespoons seedless raspberry jam
  • 1 (3 ounce) package ladyfingers or 24 vanilla wafers
  • 1/4 cup semi-sweet chocolate chips
  • 2 teaspoons vegetable shortening

Recipe

  • 1 in a small bowl, combine the whipped topping and jam; mix well.
  • 2 if using lady fingers: split each ladyfinger in half lengthwise and spread the topping mixture equally between the halves; replace the tops of the ladyfingers.
  • 3 if using vanilla wafers: spread the topping mixture on one vanilla wafer cookie; place a 2nd wafer on top.
  • 4 place eclairs on a baking sheet.
  • 5 in a small saucepan, melt the chocolate chips and shortening over medium-low heat.
  • 6 drizzle over the eclairs.
  • 7 chill for 1 hour, or until the chocolate is firm.
  • 8 keep refrigerated until ready to serve.
