Mr. Food American éclairs

Ingredients

- 1/2 cup frozen whipped topping, thawed
- 2 tablespoons seedless raspberry jam
- 1 (3 ounce) package ladyfingers or 24 vanilla wafers
- 1/4 cup semi-sweet chocolate chips
- 2 teaspoons vegetable shortening
Recipe
- 1 in a small bowl, combine the whipped topping and jam; mix well.
- 2 if using lady fingers: split each ladyfinger in half lengthwise and spread the topping mixture equally between the halves; replace the tops of the ladyfingers.
- 3 if using vanilla wafers: spread the topping mixture on one vanilla wafer cookie; place a 2nd wafer on top.
- 4 place eclairs on a baking sheet.
- 5 in a small saucepan, melt the chocolate chips and shortening over medium-low heat.
- 6 drizzle over the eclairs.
- 7 chill for 1 hour, or until the chocolate is firm.
- 8 keep refrigerated until ready to serve.
