Patate In Insalata Potato Salad

Ingredients

  • Servings: 4
  • 2 lbs potatoes
  • 6 tablespoons extra virgin olive oil
  • 3 tablespoons fresh finely chopped italian parsley
  • 1 garlic clove, minced
  • 1/2 teaspoon red wine vinegar
  • 2 teaspoons oregano (dry)
  • 1 teaspoon pepper
  • 1 teaspoon salt (to taste)

Recipe

  • 1 in a large pot boil the potatoes whole in salted water until done.
  • 2 in the meantime prepare the rest of the ingredients in a bowl. start by putting the oil salt, pepper and vinegar and beat them together with a fork.
  • 3 then add the oregano, garlic and parsley and continue beating with a fork until well combined.
  • 4 when the potatoes are ready drain them and peel them. be careful that you don't burn your fingers. if you are not in a hurry let them cool a bit first.
  • 5 once the potatoes are peeled cut them into cubes and place them in a bowl.
  • 6 add the rest of the ingredients and mix well.
  • 7 serve immediately or put it in the refrigerator and serve later.
