Peach Cobbler

Ingredients

  • Servings: 8
  • 8 cups sliced peaches (peeled)
  • 1/4 cup sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon nutmeg
  • 1 teaspoon ground cinnamon
  • 2 tablespoons flour
  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, cut into small pieces
  • 1/2 cup buttermilk
  • 1/2 teaspoon vanilla

Recipe

  • 1 preheat the oven to 375°f lightly butter an 8- x 10-inch baking dish.
  • 2 toss sliced peeled peaches with sugar, spices and 2 tablespoons of flour. put the fruit in the dish, then cover it with the topping. brush the top with the beaten egg and sprinkle it with sugar for a shiny, sparkly crust. bake until the fruit is cooked and bubbling around the edges, about 25 minutes. let the cobbler sit for a while before serving, but serve it warm with cream, yogurt, or ice cream.

  • 4 mix the dry ingredients together, then cut in the butter using your fingers or two knives until it forms coarse crumbs. stir in the buttermilk and vanilla with a fork until dough clings together when grabbed with your hand. if too dry, add a little more buttermilk until all the flour is moist enough to cohere. spoon the dough over the fruit using a small spoon or your fingers to give the surface a cobbled appearance. for a smoother look, you can roll the dough and cut out biscuits or simply lay the whole sheet of dough over the fruit.
