Skillet Cornbread With Prunes

Ingredients

- 1/4 cup margarine, melted 
 
- 1 1/2 cups unbleached all-purpose flour 
 
- 1/2 cup yellow cornmeal 
 
- 1/4 cup brown sugar 
 
- 2 1/2 teaspoons baking powder 
 
- 1 egg, lightly beaten 
 
- 1 cup buttermilk 
 
- 1 cup coarsely chopped pitted dried plum (prunes) 
 
Recipe
- 1 preheat oven to 375 degrees. 
 
- 2 in a medium sized bowl, combine the flour, cornmeal, sugar and baking powder. 
 
- 3 make a well in the center. 
 
- 4 pour margarine into the well. 
 
- 5 add egg, buttermilk and prunes. 
 
- 6 stir just to mix all ingredients together. 
 
- 7 do not overmix. 
 
- 8 put the batter into a greased baking dish. 
 
- 9 bake for 30 minutes or until the bread is golden on top. 
 
- 10 allow it to cool.
