Spicy Garlic Chicken Pizza

Total Time: 55 mins Preparation Time: 35 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 12 ounces boneless skinless chicken breasts
  • 1/2 cup sliced green onion
  • 2 garlic cloves, minced
  • 2 tablespoons rice vinegar or 2 tablespoons vinegar
  • 2 tablespoons reduced sodium soy sauce
  • 1 tablespoon olive oil
  • 1/4-1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon fresh ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch
  • 1 (16 ounce) italian bread (boboli)
  • 1/2 cup monterey jack cheese, shredded
  • 1/2 cup mozzarella cheese
  • 2 tablespoons pine nuts

Recipe

  • 1 rinse chicken and pat dry with paper towels.
  • 2 cut chicken into 1/2-inch pieces.
  • 3 in large mixing bowl combine half of the green onions, the minced garlic, vinegar, soy sauce, 1 tablespoon of the oil, the red pepper flakes and the black pepper.
  • 4 add the chicken pieces and stir to coat.
