Peanut Butter Fudge

Ingredients

- 2 lbs peanut butter (low fat for this one, it's pretty rich)
- 1/2 cup butter
- 1 lb confectioners' sugar
Recipe
- 1 pour peanut butter into a large microwavable bowl.
- 2 add butter and microwave for about 3 minutes or just long enough to melt the mixture - do not let burn!
- 3 when the butter melts to a liquid blend well with the peanut butter.
- 4 slowly add the confectioners' sugar and blend well.
- 5 microwave for a bit longer to loosen the mix up if necessary.
- 6 pour mix into a baking pan (1 to 2 inches thick) lined with wax paper (opt.).
- 7 put in the refridgerator for 1 to 2 hours or until a firm texture.
- 8 sprinkle extra confectioners' sugar or chocolate on top if you like.
- 9 cut into squares and serve.
- 10 when storing separate layers with wax paper.
