Fingerling Slices In Duck Fat

Ingredients

  • Servings: 4
  • 1/4 cup duck fat
  • 1 1/2 lbs fingerling potatoes, sliced in thirds
  • 1 large garlic clove, finely chopped
  • 1/4 cup chopped fresh thyme
  • salt and pepper

Recipe

  • 1 in skillet, melt fat over medium high heat.
  • 2 toss in potatoes, garlic, and thyme. season to taste with salt and pepper.
  • 3 cook over moderate heat for 25 minutes or until potatoes are cooked through.
