- 1/4 cup duck fat
- 1 1/2 lbs fingerling potatoes, sliced in thirds
- 1 large garlic clove, finely chopped
- 1/4 cup chopped fresh thyme
- salt and pepper
Recipe
- 1 in skillet, melt fat over medium high heat.
- 2 toss in potatoes, garlic, and thyme. season to taste with salt and pepper.
- 3 cook over moderate heat for 25 minutes or until potatoes are cooked through.
