Mushroom Almond Pâté

Ingredients

  • Servings: 10
  • 1 cup slivered almonds
  • 1 garlic clove
  • 1 small onion
  • 1 lb mixed mushrooms (button or porcini)
  • 1/4 cup butter
  • salt
  • 1/2 teaspoon thyme
  • pepper
  • 1 tablespoon wine (can be replaced with sherry)
  • 2 tablespoons olive oil
  • 1/2 cup parsley, finely chopped

Recipe

  • 1 toast the almonds.
  • 2 coarsely chop garlic, onion and mushrooms in a food processor. sauté in butter over medium-high heat with thyme, salt and pepper to taste, and wine; simmer until liquid has evaporated.
  • 3 grind 3/4 cup of almonds finely; add oil and process until creamy. add mushroom mixture and process until smooth. mix remaining almonds slivers through the mixture; put into a mould and chill.
  • 4 garnish with parsley before serving.
