Mushroom Almond Pâté

Ingredients

- 1 cup slivered almonds
- 1 garlic clove
- 1 small onion
- 1 lb mixed mushrooms (button or porcini)
- 1/4 cup butter
- salt
- 1/2 teaspoon thyme
- pepper
- 1 tablespoon wine (can be replaced with sherry)
- 2 tablespoons olive oil
- 1/2 cup parsley, finely chopped
Recipe
- 1 toast the almonds.
- 2 coarsely chop garlic, onion and mushrooms in a food processor. sauté in butter over medium-high heat with thyme, salt and pepper to taste, and wine; simmer until liquid has evaporated.
- 3 grind 3/4 cup of almonds finely; add oil and process until creamy. add mushroom mixture and process until smooth. mix remaining almonds slivers through the mixture; put into a mould and chill.
- 4 garnish with parsley before serving.
