Oatmeal Cake

Ingredients
- 1 1/2 cups boiling water
- 1 cup raw oatmeal
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 cup butter
- 1 cup sugar
- 1 cup brown sugar, firmly packed
- 2 eggs
- 1 teaspoon vanilla
- 3 tablespoons margarine
- 3/4 cup brown sugar
- 1/2 cup coconut
- 3/4 cup chopped nuts
- 1 egg
- 3 tablespoons milk
Recipe
- 1 cake preheat oven to 350.
- 2 in medium bowl, combine boiling water over oats.
- 3 mix well.
- 4 allow to stand 30 min.
- 5 grease a 9x9x2 pan.
- 6 add flour, baking soda, nutmeg& cinnamon.
- 7 set aside.
- 8 in large bowl, cream butter.
- 9 add sugars.
- 10 add eggs one at a time.
- 11 add vanilla.
- 12 add rolled oats.
- 13 beat in flour mixture until well mixed.
- 14 pour batter in pan, put in oven for 50 min or until top springs back when gently pressed with finger tip.
- 15 topping.
- 16 in a small bowl combine ingredients.
- 17 spread over hot cake.
- 18 return cake to oven& continue cooking 10 min longer or until topping is golden.
- 19 cool cake in pan on wire rack.
- 20 cut into squares.
