Oatmeal Cake

Total Time: 1 hr 55 mins Preparation Time: 45 mins Cook Time: 1 hr 10 mins

Ingredients

  • 1 1/2 cups boiling water
  • 1 cup raw oatmeal
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 cup butter
  • 1 cup sugar
  • 1 cup brown sugar, firmly packed
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 tablespoons margarine
  • 3/4 cup brown sugar
  • 1/2 cup coconut
  • 3/4 cup chopped nuts
  • 1 egg
  • 3 tablespoons milk

Recipe

  • 1 cake preheat oven to 350.
  • 2 in medium bowl, combine boiling water over oats.
  • 3 mix well.
  • 4 allow to stand 30 min.
  • 5 grease a 9x9x2 pan.
  • 6 add flour, baking soda, nutmeg& cinnamon.
  • 7 set aside.
  • 8 in large bowl, cream butter.
  • 9 add sugars.
  • 10 add eggs one at a time.
  • 11 add vanilla.
  • 12 add rolled oats.
  • 13 beat in flour mixture until well mixed.
  • 14 pour batter in pan, put in oven for 50 min or until top springs back when gently pressed with finger tip.
  • 15 topping.
  • 16 in a small bowl combine ingredients.
  • 17 spread over hot cake.
  • 18 return cake to oven& continue cooking 10 min longer or until topping is golden.
  • 19 cool cake in pan on wire rack.
  • 20 cut into squares.
