Nutty Baked Caramel Corn

Total Time: 1 hr 30 mins Preparation Time: 25 mins Cook Time: 1 hr 5 mins

Ingredients

  • 3 quarts popped popcorn
  • 1/2 cup butter
  • 1 cup firmly packed brown sugar
  • 1/4 cup dark corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla
  • 2 cups mixed nuts (your favs!)

Recipe

  • 1 preheat oven to 250 degrees.
  • 2 place popped popcorn into a large 4" deep buttered baking pan and place it in the oven to keep warm.
  • 3 in a large saucepan, melt the butter over low heat.
  • 4 stir in brown sugar, corn syrup, and salt.
  • 5 bring to a boil, stirring constantly.
  • 6 boil without stirring for 5 minutes.
  • 7 remove from the heat and quickly stir in the soda & vanilla.
  • 8 remove popcorn from the oven.
  • 9 slowly pour syrup mixture over popcorn and add nut mix, mixing well.
  • 10 butter a 15.5"x10.5"x1" baking pan.
  • 11 turn all into the pan.
  • 12 bake at 250 degrees for 1 hour, stirring every 15 minutes.
  • 13 remove from oven & cool completely.
  • 14 break or cut apart.
  • 15 store in tightly covered container.
