Scandinavian Raspberry Ribbons

Ingredients
- 1 cup unsalted butter, at room temperature
- 1/2 cup confectioners' sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 cup raspberry jam
- 1/2 cup confectioners' sugar
- 2 teaspoons fresh lemon juice
- 1 teaspoon cream or 1 teaspoon milk or 1 teaspoon water
Recipe
- 1 preheat the oven to 375 degrees f.
- 2 cover cookie sheet with parchment or baking paper.
- 3 make the dough.
- 4 in a large bowl, cream the butter and sugar together with an electric mixer.
- 5 add the egg yolk and vanilla and beat until light.
- 6 add the flour, a little at a time, and mix until the dough is smooth.
- 7 divide the dough into 4 parts.
