Coconut-apricot Truffles

Ingredients

  • Servings: 3
  • 1 1/2 cups whole, unsalted almonds
  • 2 cups dried apricots
  • 2 teaspoons cinnamon
  • 2 teaspoons almond extract
  • 1/2 cup sweetened shredded coconut

Recipe

  • in a food processor with the knife blade, thoroughly combine first four ingredients until the mixture forms a dough-like ball. using your hands, firmly roll into 1-inch balls. roll in coconut.
