Rieska - Finnish Potato Flat Bread

Ingredients
- 10 ounces mashed potatoes, cooled
- 1 cup flour
- 1 large egg
- 1 pinch salt
Recipe
- 1 preheat oven to 425°f.
- 2 mix all ingredients in a bowl and divide the dough into 4 portions.
- 3 place the portions on a baking tray lined with baking paper and flatten each portion with flour dusted fingers into round disks.
- 4 prick the breads with a fork and bake for 15 minutes. serve warm with butter, smoked salmon and fresh dill.
