Rieska - Finnish Potato Flat Bread

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 10 ounces mashed potatoes, cooled
  • 1 cup flour
  • 1 large egg
  • 1 pinch salt

Recipe

  • 1 preheat oven to 425°f.
  • 2 mix all ingredients in a bowl and divide the dough into 4 portions.
  • 3 place the portions on a baking tray lined with baking paper and flatten each portion with flour dusted fingers into round disks.
  • 4 prick the breads with a fork and bake for 15 minutes. serve warm with butter, smoked salmon and fresh dill.
